In an alternative universe I love to cook and am good at it. In this one, in reality I rarely feel inspired. This week however, with the temptation to lick the bowl clean experience of a spicy sandia and tomato cold soup eaten out, the desire to cook by non-cooking finally hit.
Lunch at my home during our local heat wave today was outstanding. The first offering shared here from the kitchen of M:
gazpacho with avocado done right
(no linen napkin or chilled spoon brought to the table on it’s own chilled plate like the $$$ establishment though -maybe next time)
6 roma tomatoes (I leave seeds in), 1 yellow onion, 1 green pepper, 1 jalapeno (seeds left to taste), small bunch cilantro, 1 Tbsp olive oil, juice 1/2 lemon, juice 1/2 lime, salt (to taste). puree all together in food processor, chill and garnish
